Nitrogen gas is an eminent and most popular gas used for
modified atmosphere packaging (the practice of modifying the composition of the
internal atmosphere of a food or drug package so as to increase the shelf life
of the food). Places, where Nitrogen for food processing is
used, include food packaging, mixing, coating, freezing, and grinding. While
packing food, displacing oxygen and purging nitrogen allows the shelf life of
the food products to increase dramatically. Increased shelf life means less
food wastage and happier customers.
